Being the crazy busy mamas that we are, we need some super simple meals on hand that we can quickly prepare and enjoy. I am sharing with you all today one of my all time favorites. Hugs to my sister Trish who was so gracious to share this with me last year. Simple Chicken Taco Soup is now a staple in our pantry most of the time, mainly through the winter months, but I love it so much I make it year round. It also keeps great in the freezer for all you freezer meal mamas.
Ingredients for Chicken Taco Soup:
- 3 cups Chicken Diced
- 1 Can of Corn
- 2 Cans of Chicken Broth
- 1 16 Ounce Pace Salsa (medium)
- 1 8 Ounce Tomato Sauce
- 2 Garlic Cloves or 1/2 t. Minced Garlic
- 2 Tablespoons Chili Powder
- 1 teaspoon Cumin
Optional:
- 1 Can pinto beans drained
- 1 Can black beans drained
- Sour Cream
- Shredded Cheese
- Fritos
Let’s get Cooking
First you’ll want to saute your diced chicken along with the garlic. I like to break my chicken up into smaller pieces as it cooks this gets easier to do the more cooked through it becomes.
While the chicken is cooking add salsa, drained corn, chicken broth, tomato sauce to a large saucepan over medium heat, then add chili powder and cumin stir well and finally add the chicken; Bring to a boil then let simmer for at least an hour or more; Serve with a spoonful of sour cream, sprinkle some shredded cheese & add Fritos if desired. YUMMO! Enjoy:-)

- 1 Can pinto beans drained (Optional)

- Saute chicken & garlic till completely cooked set aside;
- Add salsa, drained corn, chicken broth, tomato sauce to a large sauce pan over medium heat;
- Add chili powder & cumin stir well;
- Add chicken;
- Bring to a boil then let simmer for at least an hour or more;
- Serve with sour cream, sprinkle some shredded cheese & add Fritos if desired.
