Here’s the recipe:
- 2 ripe bananas, mashed
- 1/2 cup peanut butter (or other nut butter)
- 1/4 cup honey
- 1 tsp vanilla extract
- 2 cups rolled oats
- 1/2 cup chopped nuts (walnuts, almonds, or pecans work well)
- 1/2 cup dried fruit (raisins, cranberries, or chopped dates)
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/4 cup mini chocolate chips (optional but this will add dairy product to the recipe)
- Preheat the oven to 350 degrees F (175 degrees C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the mashed bananas, peanut butter, honey, and vanilla extract.
